Who said pizza had to be unhealthy?

Satay Pizza

Having a night in last weekend resulted in a tasty Vegie Satay Pizza. This was delish folks, worth a try!

If you’re a ‘no tofu’ kinda person you could add any other type of protein….chicken would work perfectly!

 

 

 

Vegie Satay Pizza

Ingredients
1 wholemeal pizza base
2 fresh tomatoes, sliced
1 clove garlic, minced
150g roasted pumpkin
2 tablespoons extra virgin olive oil
1/2 cup peas
1-2 red chillies
1 red capsicum, finely sliced
100g firm tofu, crumbled
1/3 cup Theresa Cutter Satay Sauce (super easy, takes 5 mins)
Wedges of lemon (optional)

Method
Preheat the oven to 200c. Brush the base with oil and garlic and top with tomato slices, pumpkin, peas, capsicum, chillies and crumbled tofu. Bake for 20 mins. Take pizza out and spoon over satay sauce, pump up the oven a little and bake for another 10 mins. Sprinkle rocket leaves over the top before serving piping hot with lemon wedges.
